Butifarra is a sausage with multiple local varieties.

The notion of butifarra comes from the Catalan word botifarra . The concept can refer to a type of sausage or a sandwich .

Before going into the specific detail of each of these preparations, it is important to note that a sausage is a tripe (intestine) that is filled with minced meat and other ingredients. A sandwich , meanwhile, is a sandwich: a meal that consists of two slices of bread with some sausage, cheese, ham or other food in the middle of both.

In Peruvian territory , botifarra is a sandwich that is usually offered in street stalls. It is made with French bread (also known as battle bread , beaten bread or marraqueta ); a type of pork ham called country ham ; lettuce ; and creole sauce (a marinade with chili, lemon and red onion).

The one who offers sausages is referred to as butifarrero . These people work on beaches and at large events, such as religious festivities and shows. In colonial times, meanwhile, botifarras were sold during bullfights.
