The first step is to prepare the so-called dough, mentioned in the previous paragraph, which is the first phase of the dough that we will use to make the puff pastry. At this point, everyone has their own style of kneading, so the important thing is to use the water , flour and salt to make an elastic and uniform bun, which we must cover with transparent film and leave for a while to rest at room temperature. atmosphere . We continue with the filling, which should have a medium consistency and a rectangular shape. It is also wrapped in plastic wrap, but placed in the refrigerator.

It's time to prepare the puff pastry, which is the protagonist of the recipe. To do this, we must stretch the dough until it is in the shape of a rectangle, put the filling in the center and then cover it with the dough. Next comes the most laborious part, which serves to achieve the typical consistency of puff pastry: it must be folded six times on itself , and left to rest for half an hour in the refrigerator after each one. Once ready, it should be stretched, painted with the egg yolk and added with the seeds and cheese. It is cut into strips and cooked at 200 degrees in the oven until golden.
