Honeysuckle bud tea

With its Chinese name roughly Jin Yin HuaChá , honeysuckle tea is made from buds that are picked early in the morning, just when the dew has finished but before the sun rises and the flowers open, and are left dry in the sun. The harvest takes place in spring and summer, mainly in Guangxi, a province in southern China. It is an ideal infusion for times of low temperatures, when we start to catch a cold and our defenses lower.

Among herbs with detoxifying properties, honeysuckle is one of the most prominent and has been used for medicinal purposes since the 7th century. Both the bud, the flower and the stamens of the honeysuckle are used; The flower, for example, is used to produce a syrup that softens the respiratory system and relieves congestion.

Its flavor is mild and similar to vanilla, although slightly bitter. Many recommend combining honeysuckle bud tea with other herbs, such as rosemary. This well-known spice is characterized by having pointed leaves and flowers of various colors (light blue, pink, white and purple).

The recipe consists of:

  1. Heat water to 90°C, just before it boils.
  2. In a teapot, add a tablespoon of rosemary leaves and two of honeysuckle bud tea.
  3. Pour water into the teapot and gently move it in circles for several seconds so that the leaves and flowers become moist.
  4. Pour out the water and fill the kettle again, this time letting it sit for a maximum of 5 minutes.
  5. Sweeten the infusion with honey and serve.
