Specifically, this process takes place from the moment the pig is slaughtered until the final product, the ham, is obtained and goes on the market. However, above all, it refers to that stage in which the piece is subjected to salting, in which it is turned so that it acquires the salt on both sides, in which it is washed and settled, as well as in which it proceeds to undertake drying.

Exactly the drying takes place in a place, called a drying room, where there are specific conditions of humidity, luminosity, ventilation and temperature. This is how you will be able to obtain the best ham. And all thanks to this long process that usually lasts between two and three years.
